Hi Everyone! Monday is here again. If you have children, does your house sound quiet? LOL! Mine sure does!

I love using cornflakes as a coating. I bought a huge box for the boys one time and they didn't like it as a cereal, so I used the the whole box to coat different meats, (chicken, pork, fish), and as crumbs in meatloaf by pulsing the cereal in my food processor. I thought it would add a sweet flavour to the food but surprisingly enough, it was delicious! Enjoy!

Cereal coated pork chops

6 pork chops (1/2-inch thick)
2 eggs
1/3 cup milk
3-4 cups crushed regular corn flakes
salt and pepper

Dry pork chops well. Mix eggs and milk until well blended. Crush corn flakes in fairly large pieces with hands onto wax paper or by putting into a zippy bag, sealing and breaking with a rolling pin. Salt and pepper the pork chops. Dip each one into egg mixture and then into crushed corn flakes. Make sure the chop is completely covered with the coating. Place chops on greased rack of broiler pan so that pork fat can drip to bottom. Bake at 350 degree oven 30 minutes. Reduce heat to 300 degrees and continue baking 15 minutes or until tender when tested with a fork. Serves 6.
