Hi Everyone! Can you believe the week is half over? Today's recipe is Marinated Beef Tenderloin. This is an excellent make ahead meal. Cooking time is less than 30 minutes and minimal cleanup is required.

Starting March 4, I will attempt a weekly meal plan with 5 recipes and a grocery list. I've just started working on them and will send reminders as the date gets closer.

Marinated Beef Tenderloin

2 pounds beef tenderloin steaks, cut into bite-sized pieces
1 (16-ounce) bottle of Zesty Italian salad dressing; or enough to cover meat
1 onion, cut into 8 large pieces

Combine beef pieces and onion with salad dressing in zippy bag. Marinate in refrigerator overnight, flipping over several times; drain dressing and onion. Thread beef onto skewers; place in baking pan. Bake at 350 degrees for 10 minutes or cook on outdoor grill.
Serve with baked potatoes and frozen green beans with some butter and a sprinkle of oregano or parsley.
