February 11, 2007 Spicy Meatloaf

Hi Everyone! We tend to stock up on lean ground beef when it's on sale. Here is a meatloaf recipe that looks good. I plan on using one of the packages to test this recipe and the leftover option.

Spicy Meatloaf

1 pound each lean ground beef and ground turkey breast
1/2 to 1 package taco seasoning mix
1/2 cup dry bread crumbs
1 small chopped onion
2 lightly beaten egg whites
1/3 cup barbecue sauce
worchestershire to taste
1/2 tsp. minced garlic

Preheat oven to 425 degrees. Mix all ingredients well and shape into a 10-by-6-inch loaf. Place in a 9-by-13-inch baking dish lined with nonstick foil. Cover evenly with mild or hot salsa. Bake 45 to 60 minutes or until internal temperature is 160 degrees. Pour off pan juices. Cover and let stand 10 minutes before slicing.

Serve with mashed potatoes and baby carrots.

As promised, leftovers can be made fun! How about Meatloaf Cheeseburgers?

Top hamburger buns with meatloaf and then cover with cheese slices. Broil until the cheese is melted and meatloaf is hot. Serve with french fries and salad.
