Hi Everyone! Are you all ready for Valentine's Day tomorrow? This recipe is one that I archived in 2005 hoping to try it. It sounds so good that I've added to my grocery list. For the ham, I will buy a ham steak and dice it up, but leftover ham could also be used. To cut down on cooking time for the pasta, I will buy fresh, refridgerated fettuccine. It only takes 4 minutes to cook as opposed to the 11 minutes for dry.

Fettuccine al Fresco
Prep: 10 min, Cook: 10 min.

For 4 servings:
  • 1 Tbs. vegetable oil
  • 1/2 cup cooked, diced ham
  • 1/2 cup medium onion, chopped
  • 1/8 tsp. garlic powder, or 1 clove, minced
  • 3 cups spaghetti sauce with mushrooms
  • 1/4 cup fresh parsley, chopped, or 1 Tbs. dried flakes
  • 4-1/4 cups cooked, hot fettuccine
  • 1/4 cup grated Parmesan cheese

Heat oil in a saucepan over medium heat. Cook ham, onion and garlic powder 4-5 minutes, stirring often, or until onion is tender. Add spaghetti sauce and parsley. Heat through, stirring occasionally. Serve over fettuccine. Sprinkle with cheese.

Serve with side salad and fresh garlic bread.
