January 23, 2007 Skillet Ranchero Beef and Rice

Hi Everyone! Can you believe it is Tuesday already? Here is another one pan meal. I love the way ground beef, taco seasoning and salsa combine to make a quick and tasty meal. Enjoy!

Skillet Ranchero Beef and Rice

1 lb. ground beef
1/2 diced red pepper
1/2 diced green pepper
1/2 tsp. minced garlic
1 diced onion
1/2 pkg. taco seasoning
worchestershire sauce to taste
tabasco sauce to taste
salt to taste
3 cups cooked and cooled rice
1/2 c. each frozen peas, carrots, and corn, defrosted
3/4 c. prepared salsa

In a large skillet, brown ground beef, pepper, onion and garlic over medium heat until beef is no longer pink. Drain the grease. Season with taco mix and salt.

Mix rice to the skillet. Continue cooking until rice is hot; stirring occasionally.
