Hi Everyone and Happy Valentine's Day! I hope everyone gets spoiled from their honey's. We have a storm brewing outside and all the schools are closed, our oldest is happy to be having a snow day but a bit upset that his class won't be able to have a Valentine party.


The recipe that I will be sharing today is something that hubby and I experimented with last night. We took about 3 recipes for Maple Salmon and combined them to come up with this recipe, it turned out FANTASTIC and quite fitting for a Valentine's dinner. Enjoy!

Maple Salmon

1-2 lb. fresh salmon fillet, skin on
1/4 finely chopped onion
1/2 tsp. finely chopped ginger
1/2 tsp. pepper
1/2 tsp. coarse salt
1/2 cup maple syrup
1 tsp. hot sauce
lemon juice from half a lemon

Combine all ingredients except fish and pour into a large glass casserole dish. Place fish in marinade and move around until completely coated on both sides. Make sure the skin side is eventually facing up, cover and refridgerate for one hour.

Remove fish from refridgerator to a clean 9x13 buttered or greased pan. Discard sauce. Move oven rack to middle position. Broil fish skin down for 5 minutes then turn fish over for another 5 minutes or so. Watch very careful that the fish doesn't burn from the maple syrup.

The fish turned out tender and juicy and very tasty!
