Hi Everyone! The week is half over. Is everyone surviving? We've had a beautiful week, the snowbanks have been disappearing and the boys and I have gotten out as much as possible, rumour has it that it will get colder by the weekend. Oh well! We'll deal with that when the time comes...Here is a one-pan recipe that I've been wanting to try, and you can bet that we will be adding some spinach...

Italiano Chicken Pasta & Vegetable Medley

1 lb. boneless chicken breasts,cut into bite size pieces
3-1/2 cups Chicken Broth
1/2 tsp. minced garlic
3 cups uncooked corkscrew or penne pasta
1 pkg. any frozen vegetable combination
2 Tbsp. grated Parmesan cheese
oregano, to taste
worchestershire sauce, to taste

Prep/Cook Time: 25 min.

Cook chicken in nonstick skillet until browned, stirring often. Remove chicken. Add broth and garlic. Heat to a boil. Stir in pasta. Cook over medium heat 10 min.

Add vegetables and cheese. Heat to a boil. Return chicken to pan.
Cook 5 min. more or until pasta is done. Serve with additional cheese.
