March 11. 2007 Salisbury Steak/Onion Gravy/Celery Soup Sauce

Hi Everyone! I hope you all remembered to change your clocks ahead last night. Today I will share one of my Mom's recipes from her little blue binder because today would have been her 75th birthday.

Salisbury Steak/Onion Gravy/Celery Soup Sauce

1 pound ground beef
1/2 pound bulk sausage meat
1-1/2 cups cooked rice
2 eggs
salt and pepper to taste

Onion Gravy
3 cups water/1 package onion soup mix/2 tbsp. flour

Celery Soup Sauce
1 can cream of celery soup/1 cup hot milk

Combine beef, sausage meat, cooked rice, salt, pepper and eggs. Shape into 6 or 12 slightly flattened little footballs.
Place in greased baking dish and bake at 450 degrees for 40 minutes.

To serve the Salisbury Steak with Onion Gravy, heat 2-1/2 cups water, add onion soup mix and cook covered for 10 minutes. Mix flour with remaining 1/2 cup water until smooth,; gradually stir in soup. cook, stirring until thickened. Serve in separate sauce boat.

To serve the Salisbury Steak with Celery Soup Sauce, mix soup and hot milk, place meat in a casserole dish and pour over top. Top with buttered crumbs. Place in greased baking dish and bake at 450 degrees for 40 minutes.
