July 18, 2007 Stuffed Fish Fillets

Hi Everyone and Happy Wednesday to you.

I have a package of frozen fish fillets in the freezer and plan to use them to try this recipe. Enjoy!

Stuffed Fish Fillets

2 cloves garlic, minced
2 tablespoons olive oil
10 ounces spinach, cleaned, stems removed, chopped
2 cups chopped fresh tomatoes
1/2 cup pine nuts, chopped
1/4 cup Parmesan cheese
2 pounds flounder or sole fillets

1. Preheat oven to 375 degrees F.

2. Sauté garlic in olive oil until golden. Add spinach and tomatoes and cook for 5 minutes. Remove from heat and stir in pine nuts and Parmesan cheese.

3. Place each fillet on cutting board. Divide filling between the fillets. Roll up each fillet around the filling, spooning in any filling that may fall out. Place flounder fillet rolls in 13-by-9-by-2-inch baking dish lightly sprayed with nonstick cooking spray.

4. Cover the pan with foil and bake the fillets for 20 to 25 minutes until tender and flaky.

Serving: Serves: 4
Cook Time: 15 minutes
