January 16, 2007 Chicken with Jalapeno Cheese Sauce

Hi Everyone! For today's recipe we will get a bit "spicy"!

Our 10 year old loves spice and the 4 year old is beginning to enjoy it, as well. The secret is to get the sauce to the right consistency before adding it to the chicken.

For my guys, the nacho chips "MAKE" the dish!

If your family doesn't like spicy food, omit the jalapeno peppers and just call it Chicken with Cheese Sauce.


Chicken with Jalapeno Cheese Sauce

4 boneless chicken breast halves
2 finely chopped jalapeno peppers
1 diced onion
jalapeno pepper rings
1 cups shredded sharp Cheddar cheese, divided
tabasco sauce to taste
worchestershire sauce to taste
1/2 tsp. minced garlic
1/4 cup chopped green and red bell pepper
1 tbsp. olive oil
2 tbsp. butter
2 tbsp. flour
1 1/2 cups milk
1/4 tsp. salt
ground black pepper
nacho chips, optional

Preheat oven to 350 degrees. Combine bell pepper, jalapeno pepper, garlic, worchestershire sauce and olive oil. Place chicken breasts in a baking pan, lightly sprayed with nonstick cooking spray; add pepper and oil mixture and bake uncovered for 20 minutes.

While chicken is baking, melt butter in saucepan, add flour and stir for 1 minute. Whisk in milk, stirring until sauce starts to thicken. Remove from heat; stir in Cheddar cheese, tabasco sauce, salt, and pepper.

Pour sauce over chicken and continue baking, uncovered, until chicken is done and juices run clear, approximately 20 minutes. Remove chicken from oven; turn oven to broil. Return chicken to oven; broil just until lightly browned.

Arrange on a serving platter with cheese sauce spooned over chicken breast halves. Garnish with jalapeno pepper rings and nacho chips, if desired.

Serves 4.
