-------Hi Everyone and Happy Friday to you! Can you believe June is here already? Hard to believe, isn't it? This year has been going by too quickly!
I've been creating the newsletter for 6 months now and appreciate the comments, recipes and suggestions I have received so far. I can't emphasize enough how much I enjoy hearing the feedback and look forward to anything you may have to say!
We've had quite a few very hot days already and although we have central air, it is still uncomfortable to cook at these times. I'm happy to sit down with a nicely stocked salad as a main dish. Having leftover meat and precooked pasta is a bonus!
Today's recipe is a combination of both. Enjoy!
Chicken Macaroni Salad
2 cups cooked, refrigerated macaroni
1 cup diced cucumber
1-1/2 cups cut-up cooked chicken
1 tbsp. diced onion
1 tbsp. snipped parsley
1-1/2 cups mayonnaise, ranch dressing or plain yogurt
salt and fresh cracked black pepper to taste
4 cups bite-sized lettuce chunks
Rinse macaroni to separate. Mix all ingredients except the lettuce. Cover and refrigerate until chilled.
Just before serving, toss with the lettuce.
Optional additions: Tomato wedges or chunks, sweet red and/or green pepper, carrot slices, fresh baby spinach leaves...any other vegetables can be used. Diced or grated mozzarella cheese can be added. If you'd like to go for a Greek salad add black, sliced olives and feta cheese. If you'd like to leave out the lettuce, the salad will not suffer.
