Hi Everyone and Happy Tuesday to you! Today's meal will be a skillet meal. I love making them because cleanup time is minimal. The complete meal is made in one pan. This dinner consists of chicken, potatoes and vegetables. Enjoy!Skillet Chicken and Potatoes
2 tbsp. vegetable oil
8 medium red potatoes, sliced thinly
1 lb. boneless, skinless chicken breast, cut into thin strips
1 medium red bell pepper, cut into strips
1 medium onion, cut into rings
salt and fresh cracked black pepper, to taste
Heat oil in 12 inch nonstick skillet over medium heat. Add potatoes, chicken, peppers and onions to pan. Sprinkle with salt and pepper .
Cook 15 to 20 minutes, stir occasionally, until chicken is no longer pink and potatoes are tender.
Serves 4
