Hi Everyone! Happy Saturday to you!! The warmer weather is upon us, so the first thing I think about is barbecuing. Although hubby and I grill year-round, the nicer weather usually means more time spent out in the backyard enjoying the much needed SUN.

I am working on the weekly newsletters that I fell behind on and hope to send 3 of them by tomorrow afternoon which will catch me up. Sorry for the delay, I just wasn't happy with the recipes I had chosen, so I started fresh and am nearly finished choosing new recipes for all the weeklies.

Today's recipe looks like something I'd really like to try. I got it from Kraft: What's Cooking magazine in Summer 2004 issue. Although there is a 30 minute marinading time, the actual cooking time is less than 30 minutes in total. I will probably replace the zucchini with cucumber when we make it. Enjoy!

Grilled Steak & Parmesan Salad

1 boneless beef sirloin steak, 1/2-inch-thick
1 cup of Kraft Zesty Italian dressing, divided
1 bag of mixed salad greens
2 medium tomatoes cut into wedges
1 medium zucchini, chopped
1/4 cup of Parmesan Grated Cheese

  • Place the steak and 1/2 cup of the dressing in a re-sealable plastic bag and marinate in refrigerator for 30 minutes. Remove the steak from the marinade and discard marinade.
  • Preheat the grill to medium heat and grill the steak for 5 to 10 minutes on each side then cut the steak across the grain into thin slices.
  • Toss the greens with the tomatoes, zucchini and the remaining 1/2 cup of dressing then place on a serving platter. Top with the steak slices and sprinkle with the cheese.
