Salmon Pie

1 double crust piecrust for a 9-inch pie
1 medium onion
4 cloves chopped garlic
2 sprigs rosemary, leaves stripped and chopped
juice of 1 lemon
2-1/2 cups cooked salmon, skin and bones removed
1/2 cup cubed cheddar cheese
1 cup homemade or packaged hollandaise sauce
1 beaten egg

Step: 1 Place onion, garlic, rosemary, lemon juice, salmon, cheese and hollandaise sauce in a bowl and mix until salmon is flaked and everything is mixed thoroughly.

Step: 2 Grease pie dish and roll pastry. Place bottom pie crust in the dish and prick the bottom so that the pastry doesnt go soggy. Spoon filling into crust.

Step: 3 Top with second crust and brush with a beaten egg. Cut slight holes in the top crust to help air escape.

Step: 4 Bake in a pre heated oven on 400 degrees for 30 minutes or until golden brown on top.

Serves/Yields 6 Servings
