20 Minute Beef and NoodlesHi Everyone and happy Tuesday to you. Many of you have kids that are back to school today after 4 days off!
Today's recipe is another quick and easy one. Some nights, 20 minute recipes are just the thing required to get food on the table without eating more leftovers or running out to the grocery store to pick up specific necessities for dinner.
For the longest time, ramen noodles aka Mr. Noodle have been on sale at No Frills, so we are well stocked up on beef and chicken flavour. This recipe is a nice change from having it as soup and it is so versatile you can add anything you wish to it to make it into a One-Dish Main Dish...any frozen or fresh vegetables on hand...mushroom soup instead of tomato soup...leftover cubed chicken with chicken ramen instead of beef flavour and ground beef...cooked shrimp and chicken flavour ramen instead of the beef combination...cubed ham or turkey from Easter with any flavour ramen...let your imagination run wild. Enjoy!

2 packages beef ramen noodle soup
1 pound ground beef
1/2 cup chopped onion
1 can tomato soup
1/2 soup can water
1 tsp. worchestershire Sauce
1 tsp. prepared mustard
pepper to taste
Fresh basil, oregano sprig, tomato slices and grated Parmesan cheese for garnish
1. Cook noodles according to package directions. Add seasoning packets then drain off most of the liquid, save as stock in an airtight container. Set noodles aside.
2. Meanwhile, in 10-inch skillet over medium-high heat, cook beef and onion until beef is browned and onion is tender, stirring to break up meat. Discard fat.
3. Stir in tomato soup, water, worchestershire sauce, mustard and pepper. Mix in the noodles and heat through. Stir occasionally. Garnish with basil, oregano, tomato and parmesan cheese, if desired.
4. Serve with additional parmesan, if you wish.
Makes 4 servings
Prep and cook time 20 minutes.
