Hi Everyone and Happy Wednesday to you!! I made this recipe for dinner tonight and it literally took 10 minutes from start to finish.
We served with Zatarain's Jambalaya rice as a side dish, (this took 25 minutes to cook, so next time I will start the Jambalaya first), with the Red Lobster knockoff biscuits, (8 to 10 minutes), tomato wedges, cucumber slices and green pepper strips, (5 minutes to wash and cut). Next week when we have leftover ham, I will be substituting bite-sized pieces of ham instead of sausage. Enjoy!
Sausage Gumbo
4 sausage links
1-1/2 cups stock
3 cups salsa
1-12 ounce package frozen tail on, cooked shrimp, rinsed
1-10 ounce package frozen cut okra
2 cups hot cooked rice
Cut sausage into bite sized slices. Brown in skillet on both sides, remove sausage from pan and drain fat. Add stock and scrape crunchies from the bottom.
Put shrimp into colander and run cold water over them into a bowl and let sit until they are defrosted enough to remove the tails. Depending on the size of the shrimp, they may need to be cut into bite-sized chunks if too big.
Add salsa, okra and sausage to pan and bring to a boil. Reduce heat and simmer covered for 5 minutes. Add shrimp, stir until warm and serve.
Makes 4 servings.
Serve with rice, bisquick biscuits and fresh sliced vegetables.
