HI Everyone and Happy Sunday to you! Well, I survived bowling yesterday...barely! The kids had a great time and Ryan's first shot was a STRIKE! I woke up this morning with a sore shoulder and back.

15 Minute Cheesy Chicken & Rice Dinner

1 tbsp. oil
4 boneless skinless chicken breasts
1 can chicken broth
2 cups instant rice, uncooked
2 cups broccoli florettes
3/4 lb. Velveeta cheese

Heat oil in large skillet on medium high heat. Add chicken, cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet. Add broth to skillet, stir. Bring to a boil. Stir in rice, broccoli and Velveeta. Top with chicken; cover. Cook on low heat 5 minutes. Stir until Velveeta is melted.
