Hi Everyone! Can you believe the week is half over already?

Today's recipe sounds like a meal that can be made on a dreary day. Enjoy!

Skillet Beef and Mushrooms

1 pound ground beef
1 medium chopped onion
1/2 tsp. minced garlic
1 can cream of mushroom, celery or chicken soup
1 can stems and pieces mushrooms
1 can beef broth
1 can diced tomatoes
1/2 tsp. dried oregano
1 1/2 cups uncooked corkscrew pasta

In medium skillet over medium-high heat, cook beef, onion and garlic until beef is browned, stirring to separate meat. Pour off fat.

Add soup, broth, tomatoes, mushrooms and oregano. Heat to a boil. Stir in pasta and reduce heat to low. Cook 15 minutes or until pasta is cooked, stirring often. Serves 4.
