Hi Everyone and Happy Tuesday to you!

The weather here has been WICKED HOT for the last couple days and we aren't expected to get relief until at least Thursday!

When it's hot like this, I don't feel like cooking or eating. I usually manage to get through the cooking part because the guys have to eat and usually it is something quick, easy and uncomplicated as possible. Last night I made meatballs in alfredo sauce with fettuccine noodles and cut up veggies. The guys loved it but when all was said and done, I finally ate around 9pm. Tonight I made tacos with LOADS of veggies and will be eating lots of salads with the leftover veggies. It means quick and easy snacks for everyone and they enjoy putting their own together.

I've seen this recipe many times and have been wanting to try it. I've also heard of using orange pop with the bbq sauce. I'm hoping to try this soon. Enjoy!

Saucy Cola Chicken

1 fryer chicken cut into pieces or variety pieces
1 cup cola
1 cup bbq sauce

Mix cola and bbq sauce in a bowl. Pour over chicken pices in a buttered baking dish. Sprinkle with salt and pepper and bake in 350 degree oven for 1 hour, uncovered or until chicken is tender and has a nice glaze.

Serve with potato salad and corn on the cob.
