Hi Everyone and Happy Father's Day Sunday to you!

Today's recipe was shared with me from a friend over Facebook. What a great alternative way to receive and share recipes! Here are her comments and Thanks Sylvia!! Enjoy!

I think it's from a cerloxed cookbook from Costco my GF picked up, called something like 365 Crockpot Recipes With 5 Ingredients Or Less...

I copied a bunch down, and so far, they are all great, and that was just the first 2 chapters! They are all recipes from real folks around North America, so some are variations on a theme (meat, mushroom soup, onion soup mix...)

Crockpot Thai Dinner

Cut chicken or pork into cubes and put into crockpot. Add:

3/4 c. salsa
3/4 c. peanut butter
2 T. lemon juice
2 T. soy sauce
2 T. brown sugar
2 t. chopped cilantro (or more)
1 t. grated ginger

Stir it all up and let it cook for 4 hours on high, or whatever settings you prefer.

This is amazing over rice.
