Hi Everyone and Happy Monday to you.

On these hot days, I find the less time I spend in the kitchen the better. Cooking pasta ahead of time then reheating in the microwave with a bit of butter decreases cooking time drastically! When precooking for later use, cook the pasta until it is nearly al dente. Enjoy!

Shrimp Sauced Fettuccine

2 tsp. olive oil
3/4 lb. uncooked peeled medium shrimp
1 tbsp. chopped green onion
1/2 to 1 tsp. minced garlic
1 tbsp. chopped fresh or 1/2 teaspoon dried basil
1 tbsp. fresh lemon juice
1/4 tsp. salt
leftover fettuccine
Freshly grated parmesan cheese

Heat oil in a large nonstick skillet on medium. Add shrimp, onion, garlic, basil, lemon juice and salt. Cook and stir for 2 to 3 minutes or until shrimp turns pink. Remove from heat and sprinkle with cheese and serve over leftover fettuccine that has been heated in the microwave with a bit of butter.

Makes 4 servings
Preparation time: 10 minutes
Cooking time: less than 5 minutes
