Hi Everyone and Happy Friday to you!

This is a great recipe to make for a potluck. I haven't had this version but tried different variations along the same lines as this dinner. Enjoy!


Western Casserole

1 lb. ground beef
1 tbsp. vegetable oil
1 clove garlic
1/2 c. chopped onion
1/2 c. chopped green onion
1 tsp. salt
1 tsp. chili powder
1 can drained kidney beans
2 1/2 c. chunky salsa
3/4 c. uncooked rice
3/4 c. grated Cheddar cheese
1/4 c. sliced black or green olives

Brown beef in vegetable oil with garlic. Add onion and green pepper, cook until onion is tender. Drain off fat. In a 2-quart casserole, combine the meat mixture, salt, chili powder, beans, rice and salsa. Bake covered at 350 degrees for 30 minutes. Uncover and sprinkle with cheese and olives. Bake 15 minutes more.

Serves 6 to 8.
