January 31, 2008 Superbowl Special: Day 5 Piggies, Poppers and Pretzels!

Hi Everyone! Here we are on the last day of January and it's a beautiful day. Hard to believe we are supposed to get a huge storm tomorrow. Breakfast Television will be starting at 5:30 tomorrow morning instead of 6am. I guess we're in for a good one! Will it be a snow day? We'll find out in the morning. Does everyone know about School Bus Monitor?

Today's recipes are inspired by the song, "Take me out to the ballgame". I changed the words to match the snacks though. Enjoy!

Pigs in a Blanket

1 pound uncooked all beef hotdogs
2 (8-ounce) cans refrigerated crescent rolls

Sauce:
1/2 cup coarse-ground mustard
1/4 cup light mayonnaise
2 tablespoons honey

Cook hotdogs in a large skillet over medium-high heat until browned and thoroughly heated through. Drain on paper towels.

Divide crescent rolls into individual triangles. Place one hotdog in the center of each dough triangle. Roll up, starting at wide end. Arrange on an ungreased baking sheet.

Bake 350 degrees for 10 to 15 minutes or until golden brown.

Sauce:
Stir together mustard, mayonnaise, and honey. Serve with sausage rolls.

Makes 8 to 10 servings

Jalapeno Poppers with Cream Cheese

*Use latex gloves when handling the peppers*
A dozen jalapeno peppers A bar of Philadelphia cream cheese
Shake and Bake (Southern Fried) or bread crumbs

Wash the jalapenos in cold water then cut the tops off (where the stem is attached) and wash out the seeds.

With a teaspoon scoop out the cream cheese and stuff it into the jalapenos.

In a bag, combine either the Shake and Bake or bread crumbs then in a bowl crack one large egg and throw the jalapenos in to get coated.

Put the jalapenos into the bag with the bread mix to get them coated.

Preheat the oven to 450 degrees and put the jalapenos on a lightly greased pan or baking sheet for 5-10 minutes.


Home-made Pretzels

1 tbsp. yeast
1/2 cup warm water
1 tsp. honey
1 1/3 cup flour
1 tsp. salt

Preheat the oven to 325 degrees. Put the yeast in a small
bowl with the water and honey. Stir, then let the mixture sit for 5 minutes. Mix the flour and salt together in a medium-size bowl.

After the 5 minutes is up, check on the yeast mixture. It should be bigger than before and bubbly. Add this mixture to the flour and salt mixture.

Stir everything together. Use a spoon to start then finish with
your hands. The dough is ready when it's still a little
crumbly and flaky. Put the dough on the cutting board and
knead it like you are playing with clay. Knead it into one
big ball. Break off a piece of dough that's about the size
of a gumball. Use your hands to roll it into a snake shape. Twist the snake into a medium-size pretzel shape, and put it on the cookie sheet. Do this with all the dough, making 12 pretzels. Bake for 10 minutes then allow to cool slightly before tasting.

Makes a dozen pretzels
Serve with honey mustard sauce from the Piggie recipe.
