January 28, 2008 Superbowl Special: Day 2 (Chunky Guacamole/Spinach Artichoke Dip)

Hi Everyone! Happy Monday to you. Today, Mookie talked about a low fat guacamole over the air and facebooked the recipe to me. (Thanks Buddy!) I decided to share it in the Superbowl Special along with one of my favourite dips, Spinach Artichoke Dip. Stock up on chips and veggies for the big event! Enjoy!

Chunky Guacamole

Snack time gets heart-healthy with creamy avocados and zesty Mexican seasonings.

INGREDIENTS conv. chart U.S. Metric
4 ripe Hass avocados, halved, pitted
3 tablespoon(s) fresh lime juice
3 tablespoon(s) minced red onion
2 large red jalapeƱo chiles, seeded, minced
.25 cup(s) finely chopped fresh cilantro
.5 teaspoon(s) ground cumin
.25 teaspoon(s) salt
1 large clove garlic, crushed through a press

DIRECTIONS
Spoon avocado flesh into a medium bowl. Sprinkle with 1 tablespoon of the lime juice. Using a pastry blender or a large fork, mash avocados just until chunky.
Stir in remaining lime juice and ingredients until combined. Cover surface of guacamole with plastic wrap and refrigerate up to 4 hours before serving.

Spinach Artichoke Dip

1/2 pkg defrosted and drained frozen chopped spinach
1 can drained and chopped artichoke hearts
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup cream cheese
1/4 cup grated parmesan cheese
1/2 tsp. minced garlic

Preheat oven to 375 degrees. Mix together artichoke hearts, spinach, sour cream, mayonnaise, cream cheese, Romano cheese, and garlic in a small covered baking dish. Bake until heated through and bubbly, about 20 minutes.

This dip can be served with tortilla chips or slices of toasted French bread. It's a big hit at all parties.

Here are a few suggested garnishes: shredded Monterey Jack cheese, chopped red bell peppers, parsley, sliced mushrooms, or bread crumbs.
