I love using biscuit mix...or Bisquick to create a topping for a casserole, it is like cooking from scratch but skips all the measuring steps. Enjoy!
I love using biscuit mix...or Bisquick to create a topping for a casserole, it is like cooking from scratch but skips all the measuring steps. Enjoy!
1 small head broccoli or 1 package frozen broccoli
1 can stems and pieces mushrooms, drained
1 medium chopped onion
1 teaspoon minced garlic
1 cup shredded cheddar cheese
1 cup milk
1 cup biscuit mix
3 eggs
1 teaspoon salt
1 teaspoon fresh cracked black pepper
Heat oven to 400 degrees. Grease 10 inch pie plate. Heat broccoli and 1 inch salted water (1 teaspoon salt to 1 cup water) to boiling. Cook uncovered 5 minutes. Cover and cook until tender, 5 to 10 minutes, drain. Mix broccoli, mushrooms, onion, garlic, and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted between center and edge comes out clean, 30 to 35 minutes. Cool 5 minutes.
