December 5, 2007 Corn-Pepper Casserole

Hi Everyone! Well, we are halfway through the week already!

Today's recipe appealed to me mainly for the colour and texture contrast. I hope to try it soon. Enjoy!

Corn-Pepper Casserole

1/2 chopped onion
1/2 chopped red bell pepper
1/2 chopped green bell pepper
1/2 cup butter
2 slightly beaten eggs
1 can creamed corn
1 can drained whole kernel corn
1 box corn muffin mix
8 oz. sour cream
2 cups shredded cheddar cheese
milk
paprika

1. Saute the onion and bell pepper in butter.

2. Mix together the eggs, 2 cans of corn and the corn muffin mix.

3. Add the onions and peppers, and pour all into a 9x13 casserole dish.

4. Mix the sour cream with a little milk and spread on top of casserole.

5. Sprinkle cheese and paprika over all.

6. Bake at 325 degreees for 45 minutes or until done.
