Hi Everyone and Welcome to the first day of September. I can't believe I have been doing this newsletter for 9 months now. I'm having so much fun finding recipes to share with you. As always, if you have any comments, suggestions or recipes you would like to share with the group, just send me an email. I look forward to hearing what everybody thinks.

I love package meals. They are so inviting, especially if there are vegetables involved. I want to try this recipe soon since chicken is on sale at our local grocer. Enjoy!

Quick and Easy Veggie Chicken

4 sheets non-stick aluminum 12"x18" (30cm.x45cm .)
4- 4 oz. boneless chicken breasts
1-1/3 cup instant rice
12 thin slices red onion, diced
12 thin slices red pepper, diced
1 small zucchini, cubed, divided
1-1/3 cups chicken broth
4 tsp. Mrs. Dash seasoning
4 tsp. butter

1. Preheat grill to medium high.

2. Place 4 sheets of non-stick aluminum foil on flat surface. Turn up edges to form a lip. Place 1 chicken breast on each sheet of foil. Arrange 1/3 cup rice around breasts. Arrange 1/4 of the red onion, red pepper and 1/4 zucchini on top of each chicken breast. Dab 1 tsp. butter and 1/4 tsp of Mrs. Dash® Original on each chicken breast. Add the balance of the Mrs. Dash® Original Blend to the chicken broth.

3. Double fold top and one end; pour in 1/3 cup of the chicken broth into each package. Fold end tightly leaving room for heat to circulate and rice to expand.

4. Place on grill and cook for approximately 12 minutes.

5. Remove from heat; be careful of steam when opening foil.

6. Remove chicken breast to serving plate. Stir rice and vegetables together and place on plate with chicken breast and serve.

Serves: 4
