September 5, 2007 Crockpot Beef Burgundy

Hi Everyone! Can you believe the week is half over already...?? Sadly, I guess long weekends and new routines can do that to you!

Today's recipe is something I've tried a few times and with fall creeping around the corner I will probably be having it again soon. Enjoy!

Crockpot Beef Burgundy

1-1/2 lb beef for stew or stir fry beef
1 can french onion soup, undiluted
1 can golden mushroom soup, undiluted
1 small can mushrooms, drained
1/2 med onion, chopped
1/2-1 soupcanful burgundy wine (to taste)

Mix all ingredients in crockpot and cook on low for 6-8 hours. Serve over rice or noodles.

Beef cooked in a crockpot doesn't necessary need to be an expensive cut of beef. Because the meat will be cooked for a long period of time, it will be tenderized as it cooks.
