September 4, 2007 Hearty Lasagna Casserole

Hi Everyone! Welcome to back to school day!

Here is another recipe that I found from my handwritten notes. It sounds quite similar to my regular lasagna but with less ingredients. Enjoy!

Hearty Lasagna Casserole

1 tsp. sugar
2-15 oz. cans tomato sauce
1 lb. ground beef
1/3 cup sour cream
16 oz. small curd cottage cheese
8 oz. whipped cream cheese
2 handfuls parsley flakes
1 medium onion, finely chopped
12 lasagna noodles

1. In a large bowl, mix cheeses, sour cream, parsley and half the onion. Set aside in refrigerator.

2. Brown remaining onion till brown, add meat and brown well. Drain off fat. Add sauce and 1 tsp. sugar, simmer for 15 minutes.

3. Bring large pot of water to a boil and add 2 tsp. salt. Bring noodles to a boil and cook for 10 minutes. Drain.

4. Spray casserole dish with non-stick vegetable spray. Spread half the sauce on the bottom of casserole.

5. Layer noodles, spread cheese, more noodles then sauce .

6. For best results: Refrigerate overnight. Bake at 375 degrees for 35-45 minutes.
