Hi Everyone and Happy Tuesday to you! I hope you had a wonderful long weekend, (if it applies to you).

I love having meatloaf with mashed potatoes, carrots, broccoli and fresh garden vegetables. This recipe sounds very tasty! Enjoy!

Italian Meat Loaf

4 large, beaten eggs
1/2 cup breadcrumbs
6 tbsp. grated Parmesan cheese
3 tbsp. olive oil
1/4 cup chopped fresh parsley
1/4 cup chopped fresh oregano
1/4 cup minced onion
1-1/2 tsp. minced garlic
salt and fresh, cracked black pepper to taste
1-1/2 lb. ground beef
1/2 lb. ground pork
8 oz. barbecue sauce

Preheat oven to 375 degrees F.

Combine and mix well: eggs, breadcrumbs, Parmesan cheese, olive oil, parsley, oregano, onion, garlic, salt, and pepper.

Combine ground beef and pork and mix thoroughly with above ingredients. Turn into a huge hamburger patty shape, on 2 cooling racks that are criss-crossed over an edged cookie sheet. Cover top of meatloaf with barbecue sauce. Bake 1 hour and 15 minutes or until done, (use digital thermometer to test the temperature). Let rest 15 minutes before serving.

Yield: 6 to 8 servings
