August 4, 2007 Hurry-up Beef Stroganoff

Hi Everyone and happy Saturday to you!

I haven't tried cooking the heat and serve beef tips before but this recipe sounds like it has potential and it is FAST! Enjoy!


Hurry-up Beef Stroganoff

8 oz. wide egg noodles
1 tsp. olive oil
1 large, chopped onion
1-(8-ounce) pkg. sliced mushrooms
1-(17-ounce) pkg. heat-and-serve beef tips with gravy
1 can cream of mushroom soup
salt and fresh, cracked pepper, to taste
1/4 cup milk
1/2 cup sour cream
1/4 tsp. paprika
1 tsp. minced garlic
1/2 cup finely chopped fresh parsley

1. Bring a large pot of water to boil and cook the noodles according to the package directions. When tender, drain well.

2. Meanwhile, heat the oil in a 12-inch skillet on medium heat. Peel and coarsely chop the onion and add it to the pan. Add the mushrooms; stir and cook 3 minutes, or until the onion is tender. Break up any large pieces of mushroom with the edge of the spoon.

3. Stir in the beef tips and their gravy, the soup and milk. Season with salt and pepper. Reduce the heat to a simmer. Stir in the sour cream, paprika and garlic. Gently simmer until the noodles are finished cooking.

4. Serve the meat and sauce over the hot cooked noodles. Sprinkle with parsley. Makes 4 servings.

Less than 20 minutes, start to finish.
