Hi Everyone! Happy midweek to you!

I think this is what we are having for dinner tonight. I've taken the chops out of the freezer and am wanting to try something different, the best part is that all the herbs are in our garden. I will be serving with baked potatoes, corn on the cob and fresh veggies from the garden, (cucumbers, and hopefully tomatoes). Enjoy!

Herbed Pork Chops

Ingredients:

4 boneless pork loin chops, about 1-inch thick
2 tbsp. lemon juice
2 tbsp. olive oil
2
tbsp. fresh parsley, chopped
1 tsp. fresh rosemary, chopped
1
tsp. fresh oregano, chopped
1/2
tsp. fresh basil, chopped
1/4
tsp. fresh cracked black pepper

1. Brush chops with lemon juice. In a small bowl combine oil, herbs and pepper; mix well. Rub herb mixture on both sides of chops. Arrange in a baking dish; cover and refrigerate 4 hours or overnight.

2. Place pork on grill, about 5 inches over slow coals. Grill 12-15 minutes, turning once.
