Hi Everyone and Happy Thursday to you. I'd like to request that you take a look at an article and urge you to send this little boy a birthday card. If you haven't heard about Shane, he is a 7 year old with leukemia and his only wish is to get as many birthday cards as possible, (hopefully making it into the Guinness book of world records). I heard about him a few months ago on Country 95.3 and meant to send a card then. The topic was brought up again a few days ago and I sent my card yesterday. When I suggested my 11 year old send him a card as well, he liked the idea. Shane's birthday is May 30. Here is the article.

Today's vegetable medley sounds very appetizing. It could be made as a side dish with meat or a meatless main dish. Enjoy!

Zucchini Medley

2-4 tbsps. of olive oil
1 large onion, diced
1-2 stalks of celery, chopped
1-2 cups of mushrooms, chopped
1-2 carrot sticks, chopped
1 peeled and diced zucchini
1 can of plum diced tomatoes
Basil
Garlic
Salt and pepper and
Cheddar cheese (as much as you desire)

  1. Heat the oil in a large skillet and sauté the onion, then add the zucchini, celery, carrots and tomatoes.
  2. Then add the mushrooms, basil, garlic and salt and pepper to taste.
  3. Continue to cook until the veggies are soft and add the cheese at the end then turn off the heat and let it melt.
