Hi Everyone and Happy Friday to you.

I love fish and chips but don't feel comfortable deep frying them because they soak up way too much grease. This recipe looks like something I would love to try because it's baked not fried. Enjoy!


Fish and Chips in a Flash

6 medium potatoes
olive oil
coarse salt
bread or cracker crumbs
1 lemon
parsley
dill
1 tsp. Dijon mustard
salt and pepper, to taste
4 cod fillets

Heat the oven to 400 degrees and cut potatoes lengthways, each into 4 long wedges with skin left on. Brush or spray with a little olive oil and sprinkle with salt. Bake for 30-35 minutes.

Meanwhile, in a small bowl mix 4-5 tbsp. fresh breadcrumbs, grated zest and juice of a lemon, herbs , mustard and season with salt and pepper.

Lay the fish on a baking sheet and cover with the mixture. Place the fish on the top shelf over the potatoes and bake for 15-20 minutes. The top should be crispy and the fish just done inside.
