Hi Everyone and Happy Thursday to you!Occasionally we treat ourselves to Greek food. I love to have souvlaki with tzatziki sauce and Greek salad. For an appetizer, we all enjoy having Saganaki. The first time we had it, we were at a Greek restaurant with my mother in law, she asked for Saganaki then asked for the recipe. We were informed that kasseri cheese could be found at a specialty store.
If you do decide to make this appetizer, keep your face and hair back when lighting the cheese. One waitress refused to light it when we asked for it because she had been injured the week before. OPA and Enjoy!
Saganaki
1 pound kasseri cheese, cut into 1/2-inch pieces
3 tbsp. melted butter
2 tbsp. brandy
the juice of 1 lemon
Preheat the broiler.
Put the kasseri slices onto a baking sheet and brush with melted butter. Place under the broiler until cheese starts to bubble, about 4 to 5 minutes. Remove from the oven and cover with the brandy and ignite. Let the flame die down, sprinkle with lemon juice, transfer to a serving platter and serve immediately.
Serve with greek salad and souvlaki.
