Hi Everyone and Happy Wednesday to you.

I love meatloaf but don't make it very often because it takes so long to cook. Next time I decide to make it, I will try this recipe. Because it is made on the stovetop and each loaf is so small, cooking time is decreased drastically! Enjoy!

Single Skillet Meatloaves

1 pound lean ground beef
1 slightly beaten egg
1/2 cup bread crumbs
1/4 cup milk
1/2 cup grated Parmesan cheese
1 small chopped onion
1 tbsp. Worcestershire sauce
1 tbsp. dried parsley
1 tbsp. prepared mustard
1/2 tsp. salt
1/4 tsp. fresh, cracked black pepper
1 cup barbecue sauce

1. Crumble the meat into a large bowl. Add the egg, bread crumbs, milk and Parmesan cheese and mix them together using your hands

When well mixed add onion and all remaining ingredients except the barbecue sauce. Mix them together with your hands.

3. Preheat a 12-inch, nonstick skillet on medium-high. Form 6 meat patties no thicker than 1 inch, and cook for 4 to 6 minutes on each side, until the meat is no longer pink. Use thermometer to test internal temperature, if in doubt.

4. Pour the barbecue sauce evenly over the patties and cover the skillet, reducing the heat to medium-low. Continue to cook for 1 minute to warm the ketchup. Serve at once.

Serves 6.
