Hi Everyone and Happy Monday to you!

We enjoy stuffing as a side dish in place of potatoes, pasta or rice. I've tried this before and will be making it again. Enjoy!


Pork Chops and Stuffing

6 boneless pork chops, 1/2 inch thick (1-1/2 lb.)
1 medium onion, sliced
1 tbsp. oil
1/2 lb. sliced mushrooms
1-1/2 cups water
1 pkg. flavoured stuffing mix

COOK chops and onions in hot oil in large skillet 4 min. on each side or until chops are cooked through. Transfer to plate; cover to keep warm.
ADD mushrooms and water to skillet. Bring to boil.
STIR in stuffing mix. Top with the chops and onions; cover. Remove from heat; let stand 5 min.

Serve with broccoli and a side salad.

Makes: 6 servings
