This recipe sounds cool and refreshing. I'm hoping to try it soon. Enjoy!

Chicken with Lime Ginger Sauce

2 lbs. skinless chicken pieces
1 cup plain yogurt
3 tbsp. lime juice
1 tsp. minced garlic
1 tsp. ginger root, grated
salt and pepper, to taste

Preheat oven to 375 degrees. Place chicken in a greased baking dish. Mix together remaining ingredients and spoon mixture over chicken. Turn chicken pieces to coat both sides. Bake 50-60 minutes or until no longer pink inside. Serve immediately, OR Cover with foil and place in the fridge. Refrigerate for up to 1 day.
