June 5, 2007 Jambalaya

Hi Everyone! Happy Tuesday to you!

I usually buy the Zatarain's packages of Jambalaya but here is a recipe I'd like to try sometime. Enjoy!

Jambalaya

2 tbsp. olive oil
1 onion
6 sliced smoked sausages
1 cup cooked chicken, cut into cubes
2 cups quick-cook rice
1 can diced tomatoes
2 cups chicken stock
2 bay leaves
Pinch of allspice
Salt and pepper
Chopped oregano, to garnish
Sour cream, to serve (optional)

Heat the olive oil in a large frying pan and fry the onion until tender. Add the sausages and chicken and fry for an additional 2 minutes.

Add the rice, tomatoes, chicken stock, bay leaves and allspice. Cover and simmer very gently for 10 minutes or until the rice is tender and the liquid has been absorbed.

Season with salt and pepper and scatter with oregano. Serve with sour cream, if desired.

Serving: 4
