July 8, 2007 Roasted Chicken and Balsamic Rice

How could a recipe go wrong with carmelized onions, balsamic vinegar and a seasoned rice package? Cook the chicken up beforehand or purchase a preroasted chicken at the grocery store
to save time ! Enjoy!


Roasted Chicken And Balsamic Rice

2 cups chopped cooked chicken breast
4 tablespoons divided olive oil
4 cups chicken broth
2 tablespoons chopped oregano
1/4 cup balsamic vinegar
1 package flavoured rice mix
2 tablespoons butter
1 chopped onion
1/4 cup dry white wine
salt and fresh, cracked black pepper, to taste

1. Heat up 2 tbsp. oil in a medium-sized saucepan on medium heat. Stir in the onions and saute for approximately 15 to 20 minutes, until onions are dark golden brown . Remove from heat and stir in balsamic vinegar and set this all aside for later.
2. In a separate pot, prepare rice package by following directions. Pour in wine and slowly add broth.
3. Stir in your onion mixture and allow it to heat all the way through. Remove from the heat and slowly stir in the chicken and butter. Season with salt and pepper, to taste.
