Hi Everyone and Happy Saturday to you. Well, the day is finally here. I will be heading to the Good Food Festival at the International Centre for a few hours today. I'm looking forward to it.
Here is a recipe that looks like it will be good for a warm day. Enjoy!
Garlic Pasta with Tomato No-Cook Sauce
8 oz. tube pasta
1 tsp. minced garlic
2 tbsp. olive oil
1/2 tsp. dried Italian seasoning
4 Roma tomatoes
2 tbsp. canned sliced black olives, chopped finely
1/4 cup shredded Parmesan cheese
salt and black pepper, to taste
1. Cook pasta as directed on the package.
2. Place garlic in a 4-quart or larger bowl. Add the olive oil and Italian seasoning. Chop the tomatoes (unpeeled) into bite-size pieces and add them to the bowl. Stir to coat the tomatoes with oil. Drain the olives and add them to the bowl.
3. Drain the pasta in a colander, shaking it to remove as much water as possible. Add the pasta to the bowl with the tomato mixture. Pour the cheese on top and toss with the pasta until the cheese is melted. Season with salt and pepper to taste. Serve at once.
Serves 4.
