Hi Everyone and Happy Monday and Victoria Day to you! I hope you are enjoying your weekend.

Today is a good day to have a barbecue. Here is a recipe that sounds really good. I haven't tried it, but it caught my eye when I saw it.

3 lb. baby back ribs
1/3 cup pineapple juice
1/4 cup teriyaki sauce
1/4 cup ketchup
1/2 tsp. minced garlic
1 tbsp. brown sugar
1 tbsp. minced garlic
4 slices canned or fresh pineapple slices

1.
In a large Dutch oven, combine ribs and cold water to cover. Bring to a boil over medium-high heat. Cover, remove from heat, and let stand for 30 minutes.

2. In a small saucepan, combine pineapple juice, teriyaki sauce, ketchup, garlic, and brown sugar. Bring to a boil, stirring, over medium-high heat. Reduce heat to low; simmer for 10 minutes. Stir in ginger. Remove from heat; let cool.

3. Heat grill to medium. Drain ribs. Place on grill rack. Brush with half the sauce. Grill 6 inches from the heat covered for 10 minutes a side. Brush with remaining sauce. Grill, covered, until browned, about 5 minutes a side. During the last two minutes, place pineapple on grill. Grill for 1 minute per side. Serve ribs with pineapple.
