Easy Ham & Cheese PieHi Everyone and Happy Tuesday to you!
This recipe sounds like something that would be great for using up ham leftovers from a potluck or big dinner. If you are anything like me, finding new ways of "reworking" leftovers is a fun challenge...MUCH better than hearing, "Not THAT again!" when the family is informed of the dinner plan.
I love using biscuit mix to add filler to a meal and usually use it with hamburger. I will be trying this recipe soon. Enjoy!

1-1/2 cups cubed, cooked smoked boneless ham
1 cup shredded Swiss or Mozzarella cheese
1/4 cup chopped onion
1/2 cup biscuit mix
1 cup milk
salt and fresh cracked black pepper, to taste
2 eggs
1 sliced tomato
1 green or red bell pepper, cut into rings
1. Heat oven to 400ºF. Grease 9-inch pie plate. Sprinkle ham, cheese and onions in pie plate.
2. Stir biscuit mix, milk, salt, pepper and eggs until blended. Pour into pie plate.
3. Bake for 35 to 40 minutes, until knife inserted in center comes out clean. Cool 5 minutes. Garnish with tomato and bell pepper.
