July 1, 2007 Skillet Tacos

Hi Everyone and Happy Canada Day Sunday to you. With today being the first of the month and because I have been doing the newsletter for 7 months now, I'd like to ask for your input so far. If you have a comment, recipe or meal idea, feel free to send it to me.

I love making this recipe instead of regular tacos all the time. Enjoy!

Skillet Tacos

1 lb. ground beef
1 chopped onion
fresh cracked black pepper
tabasco sauce
worchestershire sauce
1/2 tsp. minced garlic
1/2 pkg. taco seasoning
2 cups water
2 cups uncooked instant rice
1/2 cup grated cheddar cheese
1/2 cup grated mozzarella cheese
coarsely crushed corn or multigrain tortillas
4 chopped tomatoes
1/2 head shredded lettuce
sour cream or to taste
salsa to taste

Brown ground beef with onion, pepper, garlic, tabasco and worchestershire sauce. Drain off grease and return to pan. Add water and bring to a boil. Stir in seasoning mix and rice. Sprinkle with cheddar and mozzarella and cover. Lower heat and cook for 5 minutes. Serve either in a bowl or soft tortilla wrap. Top with tortilla chips, tomatoes, lettuce, sour cream and salsa.

This recipe is a big hit with the kids! Both our boys love tacos and I find that this method is not as messy as the traditional tacos.

I've also added diced sweet red, green and yellow peppers with the tomatoes and lettuce. It adds colour and crunch.
