Hi Everyone and Happy Beautiful Friday to you!! With the warm weather starting we will all want to get away from the stove and eat as many vegetables, salads and cold meals as possible.
I received a request for making your own croutons, so I figured I would feature the recipe for croutons and top a Caesar Chicken Salad with them. Enjoy!
Mix together:
1 large bunch romaine (washed; wrap in paper toweling and refrigerate)
2 sliced tomatoes
2 sliced, peeled cucumbers
1 onion, cut into slices
To prepare salad; combine in large bowl then add:
1/2 bottle caesar salad dressing
Whisk the salad dressing until thoroughly blended. Chop in the lettuce and other vegetables with 1/3 cup parmesan cheese. Toss until vegetables are coated with dressing. Top with strips or chunks of grilled chicken breast, REAL bacon bits and croutons.
To make the bacon bits:
6 finely diced slices bacon
pepper, to taste
Spread the bacon pieces in the centre of a frying pan and cook on medium low until crisp. Remove from grease and drain well on paper towel.
To make croutons:
2 tbsp. butter
1/2 tsp. minced garlic
worchestershire sauce to taste
6 slices bread
Preheat oven to 325 degrees.
Place butter and minced garlic and worchestershire in a custard cup and mix well. Spread mixture over both sides of the bread and cut into cubes. Layer bread cubes over the bottom of an edged cookie sheet and bake for 20 to 25 minutes, stirring well halfway through cooking time.
