Hi Everyone and Happy Sunday to you.
This recipe sounds so yummy! Although my guys, (younger ones), complain that spinach tastes like grass when we overdo it, this sounds like something I really want to try! Enjoy!
This recipe sounds so yummy! Although my guys, (younger ones), complain that spinach tastes like grass when we overdo it, this sounds like something I really want to try! Enjoy!
Stuffed Baked Haddock
4 fresh haddock fillets
1/4 lb. diced bacon
1 medium minced onion
1/4-1/2 package frozen, drained spinach
4 slices stale white bread
1 cup milk
2 beaten eggs
2 oz. sliced almonds
salt, pepper and seasonings, (chopped basil, sage, parsley, oregano or any similar seasonings on hand)
1 cup dry white wine
Saute the onions and bacon then add spinach to warm. Break the bread into the milk and egg mixture. Add to the spinach/onion mixture, season and stir in the herbs and almonds. Lay two of the filets in a lightly greased baking pan and cover with the stuffing and top each with a second filet.
Pour the wine over and bake at about 325 degrees, basting with the wine frequently until the fish is golden brown, about 45 minutes.
Serve with boiled potatoes, broccoli and pan juices on the side.
