Thanks Pat!

We like the following recipe but spice it up a little by adding 1/4 tsp. cayenne pepper and/or replacing the tomato soup with Rotel (tomatoes with hot green peppers). Sometimes I finely grate carrots and add 1/2 cup to patties before cooking (gotta sneak in those veggies). It doesn't really have a name, we just call it that spicy meat & veggie casserole.

Spicy Meat & Veggie Casserole

1/2 lb sausage (could use hot, if you prefer)
1/2 lb ground beef
2 medium onions, thinly sliced
4 medium potatoes, peeled/thinly sliced
1 (15 oz) can cream-style corn
1/2 tsp salt
1/8 tsp freshly ground black pepper
1 can tomato soup, diluted with 1/2 can water

Combine meats and shape into patties; cook until partially done, drain well. Alternate layers of onions, potatoes, corn, patties, seasonings and soup in a lightly greased casserole dish. Cover and bake at 350 degrees for 30 minutes. Remove cover and cook until potatoes are tender and top is browned. Serves 6.

Add a tossed green salad or steamed green vegetable, bread and fruit for dessert and you have a pretty good meal.
